¼ inch slices of fresh eggplant
¼ inch slices of fresh tomatoes
Grated or crumbled sharp cheddar or blue cheese or cheese of your choice

Quickly fry eggplant slices immediately after cutting in small amount of olive oil.
Transfer to parchment lined cookie sheet, place fresh tomato slice on each eggplant slice. Top with grated or crumbled cheese, broil until cheese is melted and tomato heated through.
Serve immediately. If desired, sprinkle with fresh or dried herbs before adding cheese. 2 3 slices per person makes a lovely side dish.
