Instructions
  1. Combine sugar, water and lemon juice in a saucepan.
  2. Over low heat, stir occasionally until sugar dissolves. Increase heat and bring to boil.
  3. Add rhubarb. Simmer until rhubarb is tender , about 10 minutes.
  4. Transfer mixture to a food processor and puree until smooth.
  5. Stir in corn syrup.
  6. Refrigerate mixture until cold, about 1 hour.
  7. Transfer rhubarb mixture to ice cream maker and churn for 25 minutes.
  8. Freeze for at least 4 hours.
