  1. 1. Preheat oven to 325F.
  2. 2. Cover a 9 X 13 baking dish with parchment paper.
  3. 3. Stir flour with baking soda, cinnamon and salt in medium bowl
  4. 4. Whisk egg, brown sugar, buttermilk, oil and vanilla in a large bowl
  5. 5. Stir in flour mixture.
  6. 6. Add rhubarb and stir just until combined. Do not over mix. Scrape batter into prepared dish.
  7. 7. Bake in centre of oven until a cake tester inserted in centre of loaf comes out clean, 25 to 30 minutes. Transfer to a rack to cool in pan for 10 min.
  8. 8. Sift icing sugar over cake and serve
