  1. Pre-heat oven to 375 F
  2. Dice beets into 1/4 inch cubes.
  3. In a frying pan saute beets in olive oil until tender but firm. set aside to cool.
  4. In a food processor dice garlic, then add beets, water, salt, olive oil, and 1/4 cup flour.
  5. Add remaining flour until a rough dough forms.
  6. Place dough between two layers of parchment paper. roll out into 1/8 in. thick square.
  7. Place dough in baking sheet and remove the top layer of parchment.
  8. Use a pizza cutter (or knife) to score dough into cracker shapes.
  9. Brush with oil and sprinkle with salt.
  10. Cook for 15min, remove from oven and separate crackers.
  11. Cool crackers on a wire rack.
  12. Do not worry if they are too soft, crackers will crisp up when cooling. If they are still not crisp, place back in oven for 5 min.
