  1. 1. Heat oil in large saucepan over medium heat. Add onions and garlic. Cook for 3 minutes. Add curry, pepper and potatoes. Cook for 5 minutes. Add zucchini. Cook for 2 minutes.
  2. 2. Add vegetable stock and bring to boil over high heat. Reduce heat to a simmer and cook for 15 minutes.
  3. 3. Working in batches, transfer soup to a food processor or a blender and mix until smooth.
  4. 4. Return to pot. Serve warm or cold with a dollop of plain Greek yogurt and a sprinkle of cilantro.
