  1. 1.Bring a pot of water to a boil. Add peas and bring back to a boil. Cook 1 minute.
  2. 2. Drain peas and shock in an ice bath (bowl with water and ice cubes).
  3. 3. Pulse together the peas, garlic, Parmigiano reggiano, 1 teaspoon of salt and 1/2 teaspoon of pepper in a food processor.
  4. 4. While the processor is still running, add the 2-3 tbsp of olive oil to preferred consistency. Thicker for a crostini, thinner for pasta.
  5. 5. Season with additional salt and pepper, if needed.
