Instructions
  1. 1. Combine all ingredients in heavy large saucepan.
  2. 2. Bring to boil, stirring until sugar dissolves.
  3. 3. Reduce heat to medium-low; simmer until rhubarb is very soft and begins to fall apart, stirring occasionally, about 10 minutes.
  4. 4. Transfer compote to medium bowl and refrigerate uncovered until cold, about 3 hours.
