Chef Jesse Bell's Tomato and Sweet Pepper Gazpacho

Chef Jesse Bell prepared this delicious dish for his Chef Demo at the Lansdowne Market Harvest Fest. Now you can make it at home too!

Servings: 2

-2lbs roma tomatoes
-1 cucumber, peeled
-1 sweet pepper, seeded
-1/2 white onion
-30ml apple cider vinegar
-30ml olive oil
-Salt and pepper

1. Coarsely chop tomatoes, cucumber, pepper, and onion.
2. Combine chopped vegetables in a blender and blend until smooth.
3. Strain mixture into a large container, then put back into the blender.
4. Add apple cider vinegar and olive oil to the blender. Blend again.
5. Season with salt and pepper to taste.
