Best French Onion Soup

Try out this delicious family recipe shared by one of our Market Coordinators!

-1 tbsp butter
-2 tbsp olive oil
-2lb 4oz yellow onions
-3 large garlic cloves, finely chopped
-2 tbsp all purpose flour
-3/4 cup dry white wine
-8 cups stock (beef or vegetable)
-3 tbsp brandy
-6 slices bread
-7oz Gruyere cheese, grated

1. Melt butter with oil in large soup pot over medium heat
2. Add onions and cover for 10-12 minutes until softened
3. Add garlic and sprinkle with salt and pepper
4. Reduce heat, uncover, and cook for 30 minutes, stirring occasionally
5. Sprinkle flour and stir
6. Stir in white wine and simmer for 1 minute
7. Pour in stock and bring to a boil, stirring well
8. Reduce heat to low and add brandy
9. Simmer for 45 minutes, stirring occasionally
10. Toast one side of the bread under a broiler, flip and top with cheese, and toast again
11. Top soup with extra cheese and serve with the toast
