Sweet Potato Casserole with Sliced Tomatoes

Cook up this go-to recipe shared by one of our Market patrons!

-3 x sweet potatoes
-2 x sweet onions, peeled and chopped
-1 x apple, peeled and chopped
-2 x sliced tomatoes
-1 tbsp brown sugar
-1/4 cup apple or orange juice

1. Preheat oven to 350 F
2. Score sweet potatoes and microwave until just cooked
3. Peel sweet potatoes and slice thickly
4. Fry onions in oil of choice over medium-high heat until just cooked
5. Add chopped apple to onions and fry for two minutes
6. Layer sweet potatoes with apple and onion mixture in a greased casserole dish
7. Top with sliced tomatoes and sprinkle with brown sugar
8. If it looks as if it will be dry, add orange or apple juice
9. Cover loosely with aluminum foil
10. Bake for 45 minutes; remove foil halfway through baking time
