Sweet Potato Casserole with Sliced Tomatoes

-3 x sweet potatoes
-2 x sweet onions, peeled and chopped
-1 x apple, peeled and chopped
-2 x sliced tomatoes
-1 tbsp brown sugar
-1/4 cup apple or orange juice

-Preheat oven to 350 F
-Score sweet potatoes and microwave until just cooked
-Peel sweet potatoes and slice thickly
-Fry onions in oil of choice over medium-high heat until just cooked
-Add chopped apple to onions and fry for two minutes
-Layer sweet potatoes with apple and onion mixture in a greased casserole dish
-Top with sliced tomatoes and sprinkle with brown sugar
-If it looks as if it will be dry, add orange or apple juice
-Cover loosely with aluminum foil
-Bake for 45 minutes; remove foil halfway through baking time
